My husband (who quit smoking and starting running the first week in February) is running his first 5K tomorrow morning. My in-laws are coming to watch him run. I'm really looking forward to cooking dinner for them tonight but am having a total crisis trying to decide what to make.
Possibilities:
Shrimp Diavolo with Asparagus, Proscuitto, and Smoked Mozzarella Penne
Texas Chicken with Baked Mashed Potatoes
A Grilled Feast (Steak, Potatoes, and a Salad)
Chicken Cordon Bleu with Rice
Marinated Salmon with Pasta Primavera
Any choice would, of course, be accompanied by cupcakes for dessert!

I would have gone Texaschicken. i find that if you go too fancy, they think you are being pretentious, and grilling can be a little, well, unpredictable.
Whatever it is ... make it SIMPLE!
